Tavor is an improved Imperial Star type artichoke that grows from seed in a single season. The plants reach 3 to 4 feet tall and are nearly spineless. Each plant produces about 7 to 8 uniform, globe-shaped buds, with the main buds averaging around 4.5 inches across. The buds are green with purple tips, and they are sweet and tender when cooked, with a mild buttery flavor when steamed.

Tavor has a short vernalization period, so it sets buds with less cold exposure than many other varieties. That is part of why it can be grown as an annual from seed where the season is long enough. In USDA Zone 7 and warmer it can be kept as a perennial. In colder areas, grow it as an annual.

Buds are ready about 90 to 110 days after transplant. If you leave buds on the plant instead of cutting them, they open into large purple flowers above the jagged, silver-green leaves.

Soil: Plant in very fertile, well-drained soil with a pH of 6.5 to 7.0.

Starting indoors: Sow 8 to 12 weeks before your transplant date. Plant 2 to 3 seeds per cell, 1/4 inch deep. Germinate at 70 to 80°F. Once growing, hold at 60 to 70°F during the day and 50 to 60°F at night. Thin to one plant per cell.

Cold treatment (vernalization): Artichokes need about 10 days at 45 to 50°F to trigger budding. In mild regions this happens on its own when you overwinter a fall-planted crop. For spring-planted crops, you can give the cold exposure in a refrigerator or cooler. Timing your transplants to catch these temperatures outdoors is possible but not reliable.

Transplanting: Move 6 to 12 week old plants out to the field, spaced 2 to 3 feet apart in rows 3 to 6 feet apart. Protect from frost.

Mild areas: Where winter lows stay above 14°F, sow in fall and harvest in spring.

Harvest: Clip buds at the size you want, before the bracts open fully. Expect harvest about 90 to 110 days from transplant.
