This variety was originally found growing on Colville Tribal lands in Washington State and later earned recognition as a top softneck garlic in a national taste test.
At harvest, the flavor is mild with a light spicy note. That heat mellows out during storage, leaving a rich, smooth taste with a lingering finish. Thanks to its tight, coarse skins, Inchelium Red keeps well in storage, often lasting 6 to 9 months when cured properly.
