Matures approximately 240 days from fall planting. Chesnok Red Garlic is a hardneck variety with purple-striped bulbs. It was first collected in 1985 in the village of Shvelisi, Republic of Georgia, and has since become very popular in the US among gardeners and cooks.
The bulbs are large, with 9 to 12 elongated cloves per head, more cloves than most hardneck types. This variety is very cold-hardy, but still performs well in both northern and southern states.
Chesnok Red has a rich, sweet flavor, especially when roasted or sautéed. More mild than some other hardneck varieties, this garlic is great for most any use, from pesto to salsa to brines and fermentation. With proper curing and storage, it will keep for about 4 to 6 months.
