Its name comes from an old account of a hunter who found the first two seeds in the craw of a wild turkey in the early 1800s. The bean later spread through local gardens and became very popular.
The beans are vining, and will need support, a trellis is commonly used, but they also grow well up corn stalks. Pods reach about 4 to 6 inches and stay stringless. They can be picked young as green, snappy pods, or left to mature for dry beans. Green pods have a smooth, tender bite that reminds some growers of greasy beans but without the strings. Mature seeds show brown and tan mottling with a brown eye ring and cook up with a sweet, rich, buttery taste.
This variety has been gathered and passed down through many communities in Virginia, North Carolina, and Tennessee. It is listed in the Slow Food Ark of Taste for its food history and its place in regional seed keeping.
Turkey Craw works well as either a snap or dry bean and handles canning and freezing well.

Planting Instructions:
Beans prefer well-drained, rich soil in a sunny location. Make sure that you keep them well watered in the summer heat.
Don't bother trying to get an early start with beans โ you'll waste a lot of seed! Beans are a tender vegetable and you should not plant them until all danger of frost has passed and the soil remains above 65ยบF. Sow seeds 1ยฝ inches deep, every two to three inches. As they make efficient use of vertical space, provide a trellis. Use string or twine as wire will heat and burn the tender vines.
Pick the pods while young as they are more tender and succulent and less likely to be stringy. For seed saving, allow the pods to fully mature and dry completely out on the vines.
