60 Days to maturity. Shishito is a Japanese heirloom pepper variety. The fruits are wrinkled and thin-skinned, measuring 3-4 inches long. Typically harvested and eaten while still green, the peppers will eventually ripen to red if left on the plant. They are best enjoyed grilled or roasted.

Shishitos are generally mild, but an occasional pepper can surprise you with a bit of heat. The plants are very prolific, producing continuously throughout the season. The variety is sometimes called "Wrinkled Old Man" or "Lion" pepper.

Sow seeds in sterile potting mix, eight weeks prior to your last expected frost date. Plant seeds at a depth equal to two times their thickness. The optimum soil temperature is 80°F. Germination can be erratic. The most common cause of poor germination is the result of uneven planting depths.

Transplant only after night temperatures average above 55°F. Plants are tender and thrive in warm weather. Blossoms drop if temperatures fall below 60°F or if they get too much nitrogen.
