Mariachi is a mild hot pepper variety and a 2006 All-America Selections winner. Plants grow compact, around 18 to 24 inches tall. They are vigorous and early producing, setting heavy loads of cone shaped peppers that hang below the stem. Each pepper measures about 3 to 4 inches long and 1.5 to 2 inches wide at the crown, with smooth skin, meaty flesh, and a tapered tip.

The peppers change color as they mature, moving from creamy white or pale yellow, to a rose or orange hue, and finally to deep red. Many gardeners pick them at the creamy white stage, when the flavor is described as delicate with fruity, melon like undertones.

On the Scoville scale, Mariachi peppers measure around 500 to 600 units, similar to a mild jalapeno. Heat can climb higher, up to 1500 or 2000 units, if the plant is stressed by high heat or dry soil.

Sow seeds in sterile potting mix, eight weeks prior to your last expected frost date. Plant seeds at a depth equal to two times their thickness. The optimum soil temperature is 80°F. Germination can be erratic. The most common cause of poor germination is the result of uneven planting depths.

Transplant only after night temperatures average above 55°F. Plants are tender and thrive in warm weather. Blossoms drop if temperatures fall below 60°F or if they get too much nitrogen.
