68 days to maturity. DePurple Cauliflower has lavender/pink heads with a nutty, buttery, slightly sweet flavor and a nice texture. It works raw in salads and on veggie trays, and when roasted, sauteed, broiled, or steamed. It can also be made into fritters or a cold purple soup. Cooking turns the heads a darker, bluish purple. To keep a brighter purple color, add about a tablespoon of lemon juice or vinegar to the cooking water, or sprinkle a little on the florets before roasting or sauteing.

The plants are vigorous and early maturing, with strong leaves that help protect the heads. DePurple has uniform maturity and steady performance across a wide range of growing conditions, and it has some heat tolerance. It can be grown from an early spring sowing or as a fall crop, and it does well in both western and eastern growing areas. Handle the heads gently at harvest, since they bruise easily.

Timing.Graffiti does best as a fall crop. For a fall harvest, start seeds indoors about 10 to 12 weeks before your first fall frost, then transplant when seedlings are 4 to 6 weeks old so the heads form as the weather cools. For a spring crop, start seeds indoors 6 to 8 weeks before your last spring frost and transplant 2 to 4 weeks before that last frost date, once the plants have been hardened off.

Starting seeds. Sow 1/4 inch deep in cell trays or pots filled with moist seed-starting mix. Keep the soil at 70 to 75 F for germination, which takes 5 to 10 days. Once seedlings are up, grow them at 60 to 65 F under strong light so they do not stretch, and thin to one plant per cell.

Hardening off. Set transplants outside for a few hours a day over 7 to 10 days, adding more time gradually before they go in the ground. Avoid leaving young plants out through long stretches below 50 F, which can trigger small premature heads.

Site and soil. Plant in full sun, since sun exposure deepens the purple color. Give them rich, well-drained soil with steady moisture and a pH of 6.0 to 7.0. Work in compost or aged manure before planting along with a balanced fertilizer. Do not plant where other brassicas have grown in the past 3 years.

Spacing. Set plants 18 to 24 inches apart with 30 to 36 inches between rows. These are large plants, so give them the full spacing.
