45 to 60 days - Also known as 'Pak Choi', 'White Stalk' cabbage, 'White Celery' mustard and 'Chinese Cabbage'. A non-heading variety of Chinese cabbage, 'Bok Choy' produces bulbous upright plants of tightly clustered, wide, almost celery-like white stalks, topped by large smooth leaves that are glossy-green in color. Both the stalks and the leaves are eaten, either cooked together, or chopped separately. The flavor is mild with a slight mustard taste.

Fast growing, slow to bolt, and cold hardy, 'Bok Choy' is a good choice for cool climate areas. Grows best in spring and fall.

★★★★★ Bok Choy is amazingly easy to grow
By Kenneth Kmet (TAZEWELL, Virgin) on October 28, 2026

Bok Choy is amazingly easy to grow. Your seeds had about a 95% germination. I've grown them in Florida, and now in Virginia, in all seasons. Here in Virginia they love the cooler fall weather. I live in a valley and they also love the moisture in the air. They are much bigger and healthier looking here than in Florida. I believe its the night time temps that make the difference. We had an early few days of frost, and I thin k it actually grew overnight. The bugs pay it no attention. If I forget to fertilize on schedule it doesn't mind. Its strength of growth is between lettuce, which can be wilty, and Kale which is very hardy. Its perfect for not just Asian dishes. One of my favorite things to grow in our garden. Thanks, Ken
