Ammi Green Mist is a cool-season annual in the carrot family, grown for its large, flat flower clusters called umbels. The blooms start green, then open to white as the tiny individual flowers spread out. Umbels reach 3 to 5 inches across, sometimes up to 7 inches, sitting atop long, sturdy stems with blue-green, finely dissected foliage that gives the plant a feathery, airy look.

Plants grow 36 to 48 inches tall and are commonly grown as a cut flower. The blooms are popular in mixed bouquets because they fill space without overpowering other flowers. You may know it by one of its other common names: bishop's flower, false Queen Anne's lace, lace flower, false bishop's weed, or toothpickweed. The stems have historically been used to make aromatic toothpicks, which is where the name toothpick plant comes from.

Once established, Ammi Green Mist handles dry spells reasonably well. It attracts beneficial insects, including lacewings, lady beetles, syrphid flies, minute pirate bugs, and parasitic wasps, thanks to its nectar-rich flowers. The seed heads develop small spikes after blooming and add some texture to the garden in winter.

The sap can irritate sensitive skin, so wear gloves when harvesting or wash your hands well afterward.

For cut flowers, harvest in the morning when blooms are about 80% open, or cut while still green if you want them to open fully inside a vase. Blooms can last up to 10 days after cutting. To dry them, hang upside down in a dark space. Days to bloom: 85 to 95.

Starting Indoors: Sow seeds 4 to 6 weeks before your average last frost date. Use biodegradable pots, since the taproot is sensitive to disturbance. Transplant before the root becomes crowded. Chill seeds at 40 to 45 degrees F for 1 to 2 weeks before sowing to improve germination. Cooler growing temps of 58 to 62 degrees F work best for early seedlings.

Direct Sow (Recommended): Sow 1 to 2 weeks before your average last frost date. In the South, fall sowing works well. Sow seeds thinly and cover lightly - no more than 1/8 inch deep. Surface sowing is fine. For continuous bloom, make 2 to 3 successive sowings spaced 2 to 3 weeks apart.
