Matures in 150 days, producing crisp, light-colored flesh with bright tan skin. Roots reach 5-6 inches in width and weigh around 5 pounds, fully developing after flowering. The leaves and seed pods are poisonous. Also known as True Jicama or Yam Bean, it is called "Man Kaeo" in Thai.
Plant seeds 1/2 inch deep in soil after the danger of frost has passed, when the soil temperature is at least 70°F. Each plant should be 12-18 inches apart
