40 to 50 days — Also known as 'Spinach Mustard,' 'Spoon Mustard,' or 'Rosette Bok Choy,' it is a beautiful variety and one of the easiest Asian greens to raise. Each plant grows into a flat rosette formed by spoon-shaped, shiny dark-green leaves with pale stalks and veins. When grown in warmer weather, the rosettes tend to be more upright.
The leaves are harvested and used the same as spinach leaves, as salad greens, or lightly cooked. Stir-frying or sautéing in your favorite light oil is an excellent choice. The leaves have a mild, but distinctive mustard flavor. 'Tatsoi' reportedly can withstand cold temperatures down to 15°F (–10°C). Each packet contains one gram, which is approximately 350 seeds.
