45 to 60 days — Also known as 'Pak Choi', 'White Stalk' cabbage, 'White Celery' mustard and 'Chinese Cabbage'. A non-heading variety of Chinese cabbage, 'Bok Choy' produces bulbous upright plants of tightly clustered, wide, almost celery-like white stalks, topped by large smooth leaves that are glossy-green in color. Both the stalks and the leaves are eaten, either cooked together, or chopped separately. The flavor is mild with a slight mustard taste.Brassica rapa subsp. chinensis
Fast growing, slow to bolt, and cold hardy, 'Bok Choy' is a good choice for cool climate areas. Grows best in spring and fall. Each packet contains 0.5 gram, which is approximately 270 seeds.
