They take a long time to germinate - up to 21
days. Since they are a root crop, they prefer deep, stone-free soil.
The seeds frequently fail if they are not kept consistently wet until the
seedlings are established. Harvest in 16 to 25 weeks. The roots are
hardy and can be left in the ground until April. As a biennial salsify
flowers and goes to seed the second year. |

Planting Instructions:
Plant as early in the spring as the ground can be worked. Loosen soil to a
depth of 18 inches. Plant 3 seeds every 6 inches and cover the seeds with ½
inch of soil in rows 12 inches apart.
When the plants are well established, thin seedlings to one plant every 6
inches.
The roots are ready for harvesting from mid-October onwards. The roots are
hardy and can be left in the soil, until needed, well into April. They should
keep about a week in the fridge. |
