Chicory
Cichorium intybus

The roots of this plant are dried and roasted to be used as a coffee amendment or substitute.

A native of the British Isles, chicory has been naturalized all over the world.  It flowers at two to three feet tall.

Chicory, with sugar beet and rye was used as an ingredient of the East German Mischkaffee (mixed coffee), introduced during the 'coffee crisis' of 1976-9. Some beer brewers use roasted chicory to add flavor to their stouts.
